When we first envisioned this business, one thing I was anticipating was the chance to see how the whiskey is aging in the barrel. As our first few barrels are reaching a year old, it was time this weekend to pull a few samples and see where they were at.

While all four had very good and very similar tastes, we all found a favorite, so Barrel #2 is our choice for the first release. We anticipate bottling sometime during the week of June 22nd, so be sure you stop in! For those of you that have reserved a bottle, once they are ready we will contact you via email and will have it ready at your convenience.

One of the good problems to have is finding a place to let our barrels full of whiskey rest. Our building is small and our floor-space is limited. In searching through some pictures from other small distilleries, we found a simple solution from a small distillery in Scotland.

A few 2 x 6 boards tied together did the trick! And we can easily roll our 15-gallon barrels along a few 2 x 4 boards to get them up to the next level.

After months of waiting, we can finally say that our COLD WATER VODKA is ready to go! Made primarily from corn, this vodka is very clean and smooth, with a nice hint of sweetness.

Our very first flavored moonshine is just about available!
Our formula and label was approved, and they are being printed and sent to us. This image is the first bottling run getting ready for final proofing. I expect to bottle Tuesday or Wednesday of this week and as soon as the labels arrive, we will "slap them on" and put the bottles on the shelves!

Expect to see our Honey Lemon and our Cinnamon Maple in the next week or so as well!

So we had to at least take a quick peek at bourbon barrel #1. Here is an image I took of what it looked like. Definitely starting to take on a nice color. The smell and taste were also very encouraging! Cannot wait until it is ready for the bottle for all of you to enjoy!

I have had some great wheat whiskies before and wanted to make one here. We are mashing and fermenting this week, distilling next week, and planning to put into a barrel for aging. Unless is it so good that we need to drink it right away.
Today's mash is already bubbling away - this really foams compared to our regular corn whiskey. Fun stuff!

Finally got to fill our first barrel and put it to rest for about a year. We filled about 14 1/2 gallons into this new oak barrel and can't wait to let it do its thing!
